Materials

Hendi uses many different materials for its products. Listed below are the different materials that are used with details of their specific properties and maintenance requirements.

Metals

The list of metals has been placed in order from very high thermal conductivity to lower thermal conductivity.

Aluminium
Properties:
•    light
•    rapid and uniform heat conduction
•    suitable for all heat sources, except induction
•    not acid resistant
•    can eventually deform
•    not dishwasher safe

Maintenance:
Clean with warm water and detergent. Never use soda, this affects the aluminum. Dry well after cleaning.

Cast aluminum
Properties:
•    rapid and uniform heat conduction
•    suitable for all heat sources, except induction
•    not acid resistant
•    retaining its form
•    not dishwasher safe

Steel / Forged iron
Properties:
•    good conduction of heat
•    can tolerate much heat
•    from 2.5 mm thickness suitable for all heat sources, otherwise only  gas
•    nearly indestructible
•    not stainless
•    not dishwasher safe

Maintenance:
Clean with warm water and a little detergent immediately following  use. Grease the pan with oil (eg sunflower oil or soybean oil) after cleaning.

Cast iron
Properties:
•    heavy and hard material, shape
•    spreads the heat well and retains the heat for a long time
•    vulnerable: by bumps, drops or large temperature fluctuations, the material can crack or break
•    oven-proof
•    excellent for frying and stewing
•    porous

Maintenance:
Clean with warm water and detergent. Remove burned-on food stains with a scouring pad.
Do not soak too long. Otherwise water penetrates through to the metal which may cause corrosion.

Chrome steel 18/0
Properties:
•    hard and retaining its form (or dimensionally stable)
•    less stainless than chrome nickel steel
•    long life with good maintenance
•    easy to clean and therefore hygienic
•    magnetic
•    non chlorine-and acid-resistant with prolonged contact
•    dishwasher safe

Maintenance:
Clean with warm water and detergent. Pots and pans can be cleaned with a scouring pad (not steel wool). Dry well after cleaning.

Unspecified stainless steel
Properties:
•    non-magnetic
•    low corrosion resistance
•    dishwasher safe

Stainless steel 18/10
Properties:
•    long life
•    doesn’t rust (if properly maintained)
•    poorer thermal conductivity
•    suitable for all heat sources (pots and pans with a sandwich bottom should be fitted with the induction character)
•    no adverse effect on the taste of the food
•    non chlorine- and acid-resistant with prolonged contact
•    dishwasher safe

Maintenance:
Clean with warm water and detergent. Pots and pans can be cleaned with a scouring pad (not steel wool). Dry well after cleaning.

Plastics


ABS
Properties:
•    shape and impact resistant
•    dishwasher safe
•    suitable for temperatures from -35°C to 85°C

High density polyethylene or high density polyethylene (HDPE)
Properties:
•    hard elastic
•    unbreakable
•    good sliding properties, gives little resistance
•    can be trimmed if damaged
•    recyclable
•    conditionally suitable for the dishwasher (short program)
•    suitable for temperatures from -40˚C to +80˚C

Low density polyethylene or low density polyethylene (LDPE)
•    not hard
•    recyclable
•    suitable for temperatures from -40˚C to +80˚C

Melamine
Properties:
•    hygienic due to its smooth surface
•    scratch resistant and hardwearing
•    light
•    acid-resistant
•    not suitable for microwave
•    dishwasher safe
•    suitable for temperatures from -40˚C to +70˚C (when in contact with food)

Polycarbonate
Properties:
•    virtually unbreakable
•    retains its form
•    scratch resistant
•    also clear
•    not suitable for microwave
•    recyclable
•    dishwasher safe
•    suitable for temperatures from -40˚C to 99˚C

Polypropylene
Properties:
•    elastic
•    recyclable
•    suitable for temperatures between -40˚C and +70˚C

SAN plastic (Styrene Acrylic Nitrile)
Properties:
•    good surface hardness
•    resistant to temperature fluctuations
•    can be crystal clear (clear as glass)
•    dishwasher safe
•    suitable for temperatures between -20˚C and +120˚C

Other materials

Porcelain
Properties:
•    no flavour exchange
•    hard material
•    colourfast
•    acid-resistant
•    suitable for use in the microwave and on medium heat with flame distributor
•    poor heat conduction
•    fragile
•    can hold the heat very well
•    ovenproof up to ± 600˚C

Wood
Properties:
•    tough material
•    discolour
•    no flavour release
•    acid resistant
•    not dishwasher safe

Maintenance:
It is important to clean wood by using a scouring pad with warm water and detergent.
